It's (Vegan) Pozole Weather!
It's pozole season! It's just as delicious as your Abuelas, but without the meat! You won't believe how easy it is to prepare Viviana Vigil's recipe! Viviana’s Vegan Pozole 3 Fresh Pasilla chiles 3 Fresh Anahiem chiles 2 Fresh Jalapenos 6 -8 Fresh Tomatillos 1 bunch fresh Kale(remove spines) 1 bag Fresh Spinach 5 cloves garlic whole or minced 2 onions diced 2 1lb cans of Hominy 2 Quarts vegetable broth 1 tablespoon Oregano (to taste) 1 tablespoon Sea Salt (to taste) 1 tablespoon Earth Balance “Butter” spread (optional) Garnish Fresh Lime Cilantro Fresh shredded cabbage Radish Oregano Diced onion/green onions Red chile flakes Menudo mix Remove seeds and stems from all chiles Roughly chop chiles, tomatillos, kale and spinach In a food processor, blend chiles, tomatillos, kale and spinach ino a smooth puree. Add vegetable stock, onions, garlic, add chile mixture from food processor into a large stockpot. Add cans of hominy, salt and oregano Simmer for 45 min. The flavors meld more strongly if stored in the refrigerator and re-heated the next day. Serve with corn tortillas and top with your favorite garnishes. Serves 4-6
